Grilled pork loin chops in beer-can chicken dry-rub, with marinated bean salad and a nice cold Pilsener Urquell.

Lots and lots of fruit and salads. It's also the only time of the year I want barbeque chicken.
And of course, funnel cake.

I start to really like vegetable soup this time of year. I think that's because the hotter it gets, the less often I want to come in at the end of the day and turn the oven on to bake something. So around this time of year I'll make minestrone or something and eat that all during the week along with things that can be cooked quickly and/or on the stovetop.
I also like watermelon once it is ripe (that will be around July, probably), and grilled food in general.

But that won't stop me.

I tend to go for long stretches in the summer eating cheese and crackers with bunches of whatever fruits and vegetables look good when I go out shopping. I love cherries tho and have been known to eat at least six pounds of them a season if not more. In summer I seam to eat healthier out of laziness because cook becomes a dreaded four letter word when I am hot.

Fruits of all kinds (melons and berries if I have the choice) and I would wah it down with various Schweppes products. And greek cheese to go with the fruits, of course.

fruit, salads,BBQ any thing.... ice cream... that pretty much covers it. starch gets banned due to the heat makes my sugar crash way faster and starch can add to that problem. i do ever so love to grill in the summer...

I tend to make a lot of fruit salads, especially when cherries are in season. For some reason, right now I'm craving Haagen-Daz butter pecan ice cream. (Odd, because I'm not much of an ice cream eater). I also still want to drink hot coffee.

I am, perhaps, a BIT extreme, in cooking tools, but I have a charcoal grill, a gas grill and 2 smokers outside my back door.
When the weather gets hot, I frequently will marinate a variety of stuff, then toss a random bit on the grill and serve with whatever fruit and veg is available at the time. It keeps the cooking-heat outside.
My daughter reminds that that I really should eat, in summer.

In summer I really like eating chocolate ice-cream and macaroon. Anyway, I find it quite hard to make macaroon by myself. Could anyone please help me with the macaroon recipe?

My Macaroon recipe consists of: Go to Tescos Go to the gluten free aisle Buy Tescos own gluten free Macaroons
... probably not very helpful.
Summer food - Spinach - shredded, add a ton of grated carrot, a diced red pepper, sliced leeks, sultanas and sunflower seeds. Dressing to taste
When salad begins to pall (or it rains) chuck the whole lot in the wok and add a bit of sweet chilli and ginger.
