Wondering if you can help me locate an airship simulator game. It involved a wooden airship which has sails. You also where fighting against another airship.

I don't know if this is the game you are thinking of though.

Off at a slight tangent (because it clearly isn't the particular game that Adam_42 is interested in) the 'Dawn of Aces' game, sister to WarBirds MMO combat flight sim (which did have an offline mode so you could practice flying things before going online) had a rather spiffing Zeppelin in it, which I used to enjoy flying immensely.   It really gave one an appreciation for how hard it was to actually hit anything particular dropping bombs from airships without sights. Airship fights were quite fun, too!
