If I could abide Los Angelese, I would want very much to go down there and work in their hopefully-soon-to-be-opened kitchen, with an eye towards introducing more thematic cuisine. (Alas, I cannot abide LA, and will stay in Seattle. I find it much more suited to my temperament.) Hmmm. It does cause me to think about the possibilities of steampunk food, however.
